Zucchini-bread

zucchini bread Ingredients :
1cup vegetable oil, not olive
2 cups white sugar
1 teaspoon lemon extract or grated rind of one fresh lemon
3 cups white flour
1 teaspoon baking soda
4 teaspoons baking powder
2 teaspoons cinnamon
2 cup grated zucchini vith skin on
4 eggs
1 teaspoon salt
1 teaspoon all spyce
Method:
Beat eggs until just blended. Add oil and sugar and mix well. Add grated zucchini and lemon extract.

In separated bowl, mix all of the dry ingredients together and add to the egg mixture.

Lightly grease the bottom of 29x5x3 inch loaf pan. Pre-heat oven to 375 degree Fahrenheit. Bake for 40-60 minutes or until loaf  tests done.

If you want to make smaller loafs, the batter will make 3 small loafs.
 
Low fat version:

To decrease the fat in the recepi use 1/2  cup vegetable oil and 1/2 cup unsweetened applesauce. If you decrease the oil to less than 1/2 cup, the bread is rubbery.
