Grapes: 100% Barbera.
Vintage period and management: The manual harvest carried out at the beginning of October.
Fermentation: With controlled temperature (about 28C)
For a period of 7 8 days.
Ageing and refining: A part of the wine is put in stainless steel vats for 15 18 months, another part is kept in small French barrels. After the ageing, the wine is put in the bottles without any filtration. The refining is carried out in a place at constant temperature and right humidity, protected from sunlight and artificial light.
Tasting properties: It is an important Barbera, due to the distinctive features of the vineyard and a careful selection of the grapes. The colour is ruby, very intense. The scent shows an accentuated vinous, typical of Barbera grapes, with fruit and nutty flavours, above all almond walnut. The great structure of this wine is exalted by the right acid component that gives it elegance and pleasantness.
Recommended with: All dishes, particularly salami, cheese, strong tasting pasta, rice dishes and with white meat dishes.
