Vintage period and management: The manual harvest carried out at the end of September. For the Solatio the grapes are left to ripen on the vine some additional days.
Fermentation: With controlled temperature (about 28C).For a period of 10 12 days.
Ageing and refining: A part is put on stainless steel tanks and the rest (for the Solatio and depending on the vintage) on small wood for 10 months. After the ageing, the wine is put in the bottles without any filtration. The refining is carried out in a place at constant temperature and right humidity, protected from sunlight and artificial light.
Tasting properties: The Solatio is a wine produced only in the excellent vintages. No matter if it is Solatio or Ciabot del Re, the wine is obtained from a careful selection of grapes and a small quantity of production in vineyard. The colour is ruby, intense and impenetrable. The nose is intense and balanced, with floral aromas with ripe fruit undertones. The taste is round, smooth and big and powerful in the same time. Full bodied with polished tannins and a long intense aftertaste.
Recommended with: It is a wine that can be combined with pasta or rice and, thanks to its powerful structure, also with meat dishes. The Solatio can also be a wine for meditation.
