Vintage period and management: The manual harvest takes place at the beginning of October
Fermentation: With controlled temperature (about 28C). For a period of 10 15 days
Ageing and refining: A minimum of one year ageing. Then it is refined for some months in the bottles where it develops its glamour and unique characteristics. After the ageing, the wine is put in the bottles without any filtration. The refining is carried out in a place at constant temperature and right humidity, protected from sunlight and artificial light
Tasting properties: Its qualities differentiate it from Barolo and Barbaresco that it is associated with by the same origins of the vine type. The colour is ruby with garnet red reflections when it is ageing. The scent is a wine with violet and raspberry aromas. It is a wine with a good body , velvety and harmonious.
Recommended with: This wine can be easily combined with elegant kind of pasta and rise dishes of Piemonte. It is also suited to white meat.
