Vintage period and management: The manual harvest carried out at the end of September. For the Solatio the grapes are left to ripen on the vine some additional days.
Fermentation: With controlled temperature (about 28C). For a period of 7 8 days.
Ageing and refining: In stainless steel tanks for 7-8 months. After the ageing, the wine is put in the bottles without any filtration. The refining is carried out in a place at constant temperature and right humidity, protected from sunlight and artificial light.
Tasting properties: It is a traditional Dolcetto that emphasises well the characteristics of a wine obtained from a careful and powerful vinification. The colour is ruby with violet reflections. The scent is intensive and lengthy with fresh fruit aromas and accentuated presence of wild cherry. The taste is harmonious and the wine is well structured with an agreeable combination of right acidity and typical bitter after tasting that remains in the mouth after swallowing the wine.
Recommended with: All dishes, particularly hot Piemontese hors d ouvres, strong tasting pasta, rice dishes and with white meat dishes.
