FREGOLA WITH CLAMS

 

 

1 kg well washed clams

150 gr of  “fregola”

2 litres broth, ˝ cup of olive oil

4 cloves of garlic

500 gr tomatoes pulp

1 spoon of chopped  parsley,salt and pepper


Drop slowly the “fregola” in the boiling broth , mix and cook for 7 minutes.

In another saucepan cook

Drop slowly the “fregola” in the boiling broth , mix and cook for 7 minutes.

In another saucepan cook oil,garlic,parsley and tomatoes with salt and pepper for 10 minutes.

In another pan cook clams with a drop of oil until they open and add them to the tomato-sauce.

Add the fregola mix and serve hot.
