There are many different yeast you can pick from that will bring out the best flavor for your wine.. Or for better results, pour the sugar water into a clean and sanitized wine bottle.. Pectin will cause cloudy wine and hold in some flavors.. Most table wine will have a starting reading on the hydrometer of 1.090.. To much sugar can result in a high alcohol wine, loosing flavor.. The gravity of the wine will drop to 1.030-1.020.. This will not allow large amounts of air to sit on the wine, for long periods of time and contaminate your wine.. Stir the wine for two days 3-5 times per day.. Let the wine settle for one week before going on.. Example: If the juice & water you test with your hydrometer is at 1.040 then ADD sugar to bring the starting gravity up to 1.085 - 1.090 for wine with a finished alcohol of 12 to 12-1/2 % A/v.

In this article I take a look at a few programs that support my passion for food and wine.. A MEAL IS NOT A MEAL WITHOUT A GOOD CABERNET! I'm a Californian and I've been spoiled by the great selection of domestic and imported wines available at reasonable prices from our local supermarkets and wine shops.. So after spending a few hours in the kitchen preparing a memorable meal, I don't want to ruin it with an inappropriate bottle of wine.. Before I go shopping for wine, I consult my ListPro wine databases.. I downloaded these— French Wines and Wine Vintages —from the Personal Reference and Information section of Ilium's list exchange page .. It's fortunate that I'm familiar with California wines because these lists focus on French wines.
Potato Wine
| Potato Wine or Vodka Lite Serving Size : 1 Gallon Ingredients: 3 pounds potatoes 4 pounds sugar 4 ounces of Chopped green or light colored raisins 2 lemons 2 oranges 1 tablespoon yeast (wine yeast works best) 1 teaspoon yeast nutrient (if unavailable use 2 more lemons) Wash and scrub potatoes remove eyes and black spots.. Remove any scum that may be floating on top as it contains impurities you do not want in your wine.. (A balloon with a big mouth can be used in place of the airlock.) Transfer the wine into another gallon jug after about ten days to get rid of the sediment that gathers at the bottom of the jug.. Let the wine sit in the second jug for about 6 months.. The wine may then be bottled.. Potato wine can be used in the same way you would use vodka, only it has considerably less alcohol content.

Add 1/2 the initial sugar and take a gravity reading or taste if you are sweetening a finished wine before adding the rest.. This will insure that your wine doesn’t come out too strong.. Fermentation will stop automatically, but wine must be stabilized with potassium sorbate if sugar is added after fermentation for sweetening.. Fruit Puree Wine Recipes per 1 gallon one 49oz.. For a sweeter wine, dissolve 2 to 4 teaspoons of sugar in 1/4 cup warm water.. Add 1/2 teaspoon potassium sorbate to the wine and then add the sugar mixture to wine.

When the balloon ceases to expand, the wine is done.. NOTICE - Do not bottle the wine before it is done.. Working wine (fermenting) can explode a bottle from the gas pressure of fermentation.. Strain your wine with a cheese cloth or a tea towel and pour into a bottle, using a snap-on type of cap or use a cork.. This is a real Mormon town, and although we do have a microbrewery, winemaking supplies are not readily available.

Mix together all ingredients EXCEPT wine yeast in a five-gallon polythene bucket.. After three weeks, siphon wine into 5-gallon bucket, leaving as much oif the yeast deposit behind as possible.. Carefully rinse jug and siphone wine back into jug.. When wine is clear and bubbles can no longer be seen rising in the liquid, bottle the wine.. Now, I have never tried this recipe (or any home winemaking), so I make no warrantees or representations about how the results may turn out for any adventurous Chile-Head who wants to try this.
