My favourite recipe
 
INGREDIENTS:
   
 
 ˝ cup olive oil

4 cloves garlic sliced

1 medium onion chopped

1 stalk of celery sliced into ˝ inch pieces

1 green bell pepper, diced into ˝ inch pieces

2 tablespoons oregano

1 teaspoon red pepper flakes

1/2 cup dry white wine

1/2 cup fresh basil (or 2 tablespoons dry)

2 cans (28 0z) Italian plum tomatoes squished by hand

salt and pepper to taste

2 large Dungeness crabs, cleaned and cracked

1 pound medium shrimp, shelled and deveined

1 to 1˝ pounds cherry stone littleneck clams (soaked in cold water and scrubbed well)
      
1/2 pound cleaned mussels (optional)

1/2 pound cubed cod, halibut or other white fish (optional)

Sprigs of parsley and lemon zest for garnish



COOKING INSTRUCTIONS:

 
1. Heat olive oil in an 8 qt. pot and sauté garlic, onion, and bell pepper until translucent.

2. Add white wine and reduce for a few minutes then add tomatoes, basil and oregano. Bring mixture to a slow boil and reduce heat and simmer for 15 minutes.

3. Add he crab and shrimp to the mixture, cover and bring to a slow boil until the shrimp are opaque but partially cooked.

4. Add the fish if you are using fish and the clams and mussels and simmer for another 10 minutes or so and turn off the heat.

5. Let sit covered for 5 to 10 minutes until all the clams and mussels are opened.

6. Serve in warmed platter or large bowl with lots of warm crusty bread. Bibs are optional, but recommended.
